3 very ripe avocadoes
1 large tomato
Juice of one lemon
Fresh coriander
1 small red onion
Fresh chilli (red or green) to taste
Method:
Remove skin and stone from 3 avocados by cutting in half and spooning from skin, place in bowl. Finely dice a large tomato and add to the avocado add the juice of one lemon into the ingredients. Finely chop coriander, the small red onion and chilli. Adjust chilli to suit personal taste and add to the bowl. Mash with a fork or potato masher to your desired consistency. Serve in bowl with nacho corn chips or favourite crackers.
