We are going to talk in general terms about the health promoting properties of winter greens these include; cabbage, broccoli, spinach, silver beet, Brussel sprouts, parsley, kale, Chinese cabbage and bok choy to name but a few.
They are generally a rich source of health promoting folate, dietary fibre, vitaminC; nitrates that may help promote healthy blood pressure, betalain pigments that have anti-inflammatory properties, vitaminK, fatty acids, anti-oxidants that fight oxidative stress that maybe the root cause of disease and the visible signs of aging.
Over the last few years it has become very apparent that our natural immune system is the key to our on-going good health; this brings to mind the adage “we are what we eat”. There is a dividend and a bonus of good health that is the result of a health promoting diet; this was recognised and documented by Captain Cook in his log book as he circumnavigated and chartered New Zealand’s coastlines. The crew’s failure to eat their greens foraged from the New Zealand shoreline could result in severe punishment as the success of a voyage hinged on the physical health of the crew and all on-board.
