Small glove of garlic, grated.
2-3 medium avocados
2 tablespoons cottage cheese
2 tablespoons olive oil
1/2 small red onion very finely chopped
1 medium sized tomato finely diced
Juice of half a medium sized lemon
Mash avocados, stir in lemon juice, combine remaining ingredients and serve with corn chips
or crackers, (optional sprinkle on top 1 Tbsp of chopped coriander for extra flavour). For best results chill for 1-2 hours before serving.
